Round Two: Rematches and more

Just one round into the high school football playoffs, and we’re already using words like “showdowns” and “big rematches” and “nitty-gritty”  for Class 1A through 3A contests. (I don’t think “nitty-gritty” is a word, but for it will be for our purposes.)

Starting in 3A, there are two intra-conference rematches for round two.

For Pana and Greenville, it marks the third straight year they’ve met in the second round after meeting in the South Central Conference regular season. Top-ranked, unbeaten Greenville beat the Panthers 26-6 in Week Six this year,  and Pana (which will host the Comets) will try to figure out a way to slow down Greenville’s powerful offense. Good luck there, Panthers, but at least you’re still alive!

Just two weeks ago, North Mac came to Staunton and pulled off a surprising 45-22 Prairie State Conference win — breaking open what was a close game at halftime. It was part of the Panthers’ late-season push to get a 5-4 record and at-large playoff berth. Staunton, which was emotionally drained after the death of Brian Sherfy – the father of senior co-captain Austin Sherfy – the night before the North Mac game, will try to turn around that outcome when the Bulldogs travel north to Virden for Round Two.

But the combination of ingredients in this recipe from our CSA caught my eye here. It’s not a novel mixture for us — we roast cauliflower with olives all the time — but it’s a familiar mixture cooked in a new (and faster) way.

I showed the recipe to Ben, expecting he might like it, and I was surprised at his reaction. “Compote! I LOVE compote! Do we have any fruit? Can we make a fruit compote?” And then he spun off, looking at the pears and apples, reminiscing about the spring’s strawberry-rhubarb compote, before coming back to me and my giant head of cauliflower. “Oh, sure. That’d be good.”

With that endorsement, I got cooking, and this is a lovely new way to do cauliflower.

I’m giving you the ingredient amounts as they were listed in the recipe, but of course one of the benefits of compote is that you can adapt according to your taste (and your supplies):
