MORE than a hundred people crammed into Holy Family Church yesterday to pay their respects to one of the town’s characters.

There was not an empty seat in the church and many stood around the pews to say goodbye to Paddy Kearney, who lost his four-month battle with lung cancer on October 20.

Paddy was a well-known face in the town, especially in the Irish community, after moving from Ireland in 1966.

He used to sing with Irish musician Josie Kelly and had a voice to rival Tom Jones, his daughters said.

Speaking before the funeral, daughter Bernadette Young said: “My dad has always been a character around town.

“Whenever we meet someone, whether it be at a new job, or down the pub and they find out our surname is Kearney they always mention him.

“One of his friends summed it up perfectly, he said all these characters are dying but there is no one there to replace them.”

Paddy, a former builder from Eldene , was 74 when he died and had only found out months ago that he had lung cancer, but by the time it was diagnosed it was too late for anything to be done....

I was so excited when I searched the web recently for recipe ideas. I found a really tasty and unique one for quinoa ravioli on Alissa's blog  Just Eat Love . The texture was great and so close to traditional ravioli. But I found the recipe needed a whole lot more flour than she suggested so I've reproduced the recipe here to make sure I don't forget the proportions I like to use.
